Precision fermented, naturally floral and vibrant

In 2018, Edinson and Luz Angela founded Quebraditas, a family project focused on producing innovative, high-quality specialty coffees through advanced fermentation techniques and sustainable agronomic practices. Spanning 18 hectares between 1,600 and 1,850 m, their farms cultivate both traditional and rare varietals, with a vision of fully transitioning to unique, high-end cultivars.

Cherries are first oxidized for 16 hours in food-grade tanks, then dry pulped and oxidized again at 45°C for 24 hours to remove mucilage and induce thermal shock. The mass is macerated with Geisha pulp, cider, and Pink Bourbon, then inoculated with hybrid yeast (S. cerevisiae x S. bayanus) and fermented anaerobically for 36 hours below 25°C.
