Known for its rich volcanic soil and ideal climate, the farm produces exceptional specialty coffee through sustainable practices. The Lasso brothers focus on meticulous harvesting and processing, showcasing vibrant flavors and bright acidity in their beans. Finca El Diviso not only offers high-quality coffee but also serves as a model for sustainable agriculture, positively impacting the local community.

Sidra Bourbon is a unique coffee variety known for its exceptional flavor profile and complexity. A hybrid of Bourbon and the rare Sidra variety, it thrives in high-altitude regions, where cool temperatures enhance its sweetness and acidity. This variety is prized for its smooth body and intriguing lactic qualities, making it a favorite among coffee connoisseurs seeking a distinctive and memorable tasting experience.

The process begins with oxidation for 12 hours, followed by 60 hours of anaerobic fermentation. The cherries are then pulped and oxidized for 18 hours, undergoing a final wash with mucilage and cherry leachate. The process is completed with a thermal shock, where the beans are washed in hot water at 50°C to lock in the complex flavors.

This method brings out the vibrant tropical fruit notes, along with floral, lactic, and nutty undertones, showcasing the rich complexity of the Sidra variety.
